I have finally found a recipe where I can prepare cookies with delicious eggnog. Our family really likes eggnog, so it was obvious to try making Christmas cookies with eggnog as well. Here is our recipe:

  1. For the dough, mix the flour and baking powder. Then knead the vanilla sugar, eggnog, egg yolks, the 80g of powdered sugar, and the soft butter into a nice dough. Wrap in plastic wrap and chill for 40 minutes.

  2. Now prepare the cream, as it needs to cool down well. Prepare the pudding according to the package instructions and let it cool while stirring occasionally. Now stir the eggnog into the pudding. Beat the butter with the powdered sugar using a hand mixer until fluffy, then add the pudding spoonful by spoonful and mix.

  3. Attention: If the cream is too warm, the cream will become crumbly and won't look so nice. (We tried it and it just doesn't look so nice!)

  4. Preheat the oven to 180°C (356°F) top and bottom heat. Line the baking sheets with parchment paper.

  5. Roll out the dough on a floured surface with a rolling pin and cut out the cookies.

  6. Extra-Info: The cookies look nice when you use cookie cutters that showcase the cream. Cookie cutters like those for Linzer eyes are perfect.

  7. Place the cookies on the baking sheet lined with parchment paper and bake in the oven at 180°C (356°F) top and bottom heat for approx. 10 minutes.

  8. Let the cookies cool down well and only then spread the pudding-eggnog cream on them and assemble.

  9. Serve the cookies sprinkled with sifted powdered sugar.

  10. Extra-Info: In the original recipe the cream was prepared with 1/4 l of milk, which was far too much. Either you plan for that and then have the cream as a dessert (but you should omit the butter for the dessert, otherwise the flavor is too strong), or reduce the amount of pudding as I indicated.
