Easy seafood paella
Uncomplicated paella with Chorizo, turmeric rice, peas and seafood — Mediterranean, healthy and cooked in one pan.

Heat the oil in a large frying pan over medium heat and let the leek soften for 5 minutes without browning. Fry the chorizo until it releases its oils. Stir in the turmeric and rice until evenly coated with the oils, then add the stock. Bring to a boil and then simmer for 15 minutes, stirring occasionally.
Simmer for 5 minutes, then add the peas and heat for another 1-2 minutes, or until the rice is cooked. Season to taste and serve immediately with lemon slices.
Tips & Notes
Paella is often prepared in large quantities. If you have any leftovers, put them in the refrigerator. The dish can be kept there for at least 2 days. It can be easily reheated in a frying pan or a baking dish.
