One of my favorite dishes: meatloaf. It might sound complicated, but it isn't. My family also really likes this roast, so it appears on the table quite often. Here is my recipe, which actually always turns out well:
Recipe for meatloaf
Extra tip: I add the potatoes directly into the dish; for this, simply peel the potatoes, slice them, and add them to the sides, drizzling with a tablespoon of oil so they become crispy. If you like, you can also add a Tomato sauce on top. That tastes even better. A Mashed potatoes also tastes very good with the roast.
Preheat the oven to 180°C (356°F) top and bottom heat.
Peel the onion, chop it finely and sauté it in a little oil, then let cool.
Soak the rolls in lukewarm water, squeeze them out and puree with an immersion blender.
Crush the 3 garlic cloves with a garlic press.
Chop the parsley finely.
Mix the minced meat, bread roll puree, onion, garlic, eggs, parsley, 30 g breadcrumbs, salt, pepper, and marjoram well in a large bowl.
In a large dish, shape the meat mixture into an elongated loaf.
Brush 1 tbsp oil over the minced meat and cover with 1 tbsp breadcrumbs - this makes the roast crispier.
Bake the roast in the oven at 180°C (356°F) with top and bottom heat for approx. 1 hour.
Tips & Notes
If you don't have an immersion blender, simply mash well with a fork. If you like, you can also pour a tomato sauce over it. That tastes even better. Mashed potatoes also go very well with the roast.
