A curd cheese cake with a lattice made of dough looks very beautiful and tastes really good. My mom always baked this cake and I am happy that I can bake it too. Admittedly, I often just leave out the lattice when I'm in a hurry, but when guests come over, it just looks prettier. Curious? Then here is the recipe:

Preparation

  1. First preheat the oven to 175° C.

  2. For the cake base, crumble the flour with the margarine using a mixer.

  3. Add the remaining ingredients and mix well.

  4. Let the dough rest in the refrigerator for about half an hour.

  5. In the meantime, make the filling.

  6. Separate the 3 eggs and beat the egg whites until stiff peaks form.

  7. Topfen (Quark), egg yolks, and sugar — beat until creamy, and finally fold in the beaten egg whites.

  8. Grease the baking pan with margarine.

  9. Now use half of the dough for the base and press it into the bottom of the pan.

  10. Use a quarter of the dough for the rim, and line it along the sides of the baking pan.

  11. Reserve the remaining quarter for the lattice.

  12. For the lattice, roll the dough into small rolls on a floured work surface.

  13. Now pour the filling into the baking pan.

  14. Bake the cake with top and bottom heat at 175°C for about 15 minutes.

  15. If the Topfen layer is already a bit firmer, then place the lattice rolls on top and bake for another 25 minutes (in total it should be about 40 minutes).

  16. Let the torte cool and sprinkle with powdered sugar before serving.
