Apple strudel is a sweet type of strudel that can be made from various types of dough. The puff pastry variation is undoubtedly popular, but curd dough or yeast dough also offer a tasty alternative. Depending on your taste, the pastry can be varied with different fillings. In addition to sweet and sour apples, you can use raisins, breadcrumbs, various types of nuts, and cinnamon according to your preference.

Preparation

  1. For the strudel dough, add the flour, oil, egg, a pinch of salt and water to a sufficiently large mixing bowl and stir until the dough is smooth and homogeneous.

  2. Care should be taken not to stir the dough for too long — it must not become too warm.

  3. After finishing, cover the dough with plastic wrap and, preferably, let it cool in the refrigerator overnight.

  4. Now peel the apples, halve them, remove the core and cut into cubes.

  5. Place the apple pieces in a bowl, toss with the raisins and marinate in the lemon juice.

  6. Now preheat the oven to about 200°C (top and bottom heat) and have the strudel dough ready.

  7. On a floured work surface, roll out the dough and then lay it out on a large kitchen towel.

  8. Brush the dough thinly with previously melted butter and sprinkle with breadcrumbs.

  9. Now place the apple-raisin mixture onto the dough and roll up the strudel.

  10. To do this, grab the lower edge and carefully roll the dough into a log.

  11. Place the finished strudel on a baking sheet lined with parchment paper, brush again with melted butter and garnish with sliced almonds or chopped hazelnuts.

  12. Then bake the strudel in the oven for about 30 minutes until golden brown.

  13. After baking, let the strudel cool briefly, optionally dust with powdered sugar or a pinch of cinnamon, and serve cut into slices.

Tips & Notes

The citric acid ensures, among other things, that the apples do not oxidize and thus become unsightly brown. It also provides a light, tart flavor that cleverly offsets the sweetness of the apples.
