Preparation
The cucumber is first washed, the ends cut off, and then halved, quartered, and cut into cubes. The tomatoes are also washed and diced. Proceed the same way with the onion: peel and chop, and wash the bell peppers, remove the seeds, and dice. Put everything together in a salad bowl, mix, garnish with pickled feta cheese and olives, and toss with herbs.
Where's the dressing? For the Greek farmers' salad a dressing is usually unnecessary. The tomatoes and cucumbers release a little water. This vegetable water absorbs the flavor of the feta and the olives and thus forms a natural vinaigrette.
Dressing 1: If you like, you can drizzle a few drops of olive oil and a splash of lemon juice on top, though more would distort the flavor of the ingredients.
Dressing 2: If you do want a dressing, try the following:
Homemade yogurt dressing:
1/2 cup yogurt
1 dash of olive oil
1 garlic clove, pressed
1 tbsp lemon juice
Salt
Pepper
Mix the ingredients to taste and pour over the salad - it tastes wonderfully refreshing.
