Ingredients

Preparation

  1. Heat the water in a pot and stir in the tomato paste, let it simmer on low heat for about 10 minutes, then stir in a pinch of salt and set aside.

  2. Now finely dice the garlic.

  3. Heat a large pan over medium-high heat, add the olive oil to the pan and sauté the garlic in it for about 20 seconds.

  4. Before the garlic browns, add the strained tomatoes and stir well.

  5. Let it simmer for about 2 minutes.

  6. And here it comes: place the raw (!) spaghetti in the pan and drizzle the sauce over the pasta with a spoon and press down slightly.

  7. All the pasta should be well covered.

  8. Let the pasta fry in the pan for about 2-3 minutes - without touching!

  9. It's okay for the whole thing to get a little dark (I think this is the part about the murder).

  10. Turn the pasta with tongs and fry the other side for about 2-3 minutes as well - again, don't stir!

  11. Now gradually add 3-4 ladles of tomato water to the pan with the pasta and continue frying.

  12. The water cooks the pasta and gradually evaporates.

  13. Now you can stir as well.

  14. So turn the pasta from time to time and when the tomato water has evaporated, add more, repeating until the pasta is al dente.

  15. At the end, let the noodles fry once more without water.

  16. Drizzle with olive oil and season to taste with salt and pepper.
