I got this recipe from my dear friend, who loves kimchi and wanted to introduce it to me. She even brought me a mild kimchi as a gift for this purpose, since I unfortunately still don't really eat spicy food. Here is my recipe:
Recipe for Fried Rice with Kimchi and Egg
Extra tip:I used a mild kimchi, and you can easily add more grams of it. Furthermore, you can serve fried eggs instead of scrambled eggs. If you don't like coriander, simply add parsley instead. I also added broccoli.

Preparation
Strain the kimchi, collect the brine in a bowl and finely chop the kimchi.
Peel the onion and finely dice it, and cut the tofu into bite-sized pieces.
Cook the rice according to the package instructions.
Heat 2 tbsp sesame oil in the wok and fry the tofu, then add the onion and sauté until translucent.
Now add the cooked rice and fry it a little as well.
Finally add the kimchi and the brine as well as the coriander and briefly warm through.
Heat the oil in a pan, scramble the eggs, and add them to the fried rice.
Tips & Notes
