Found something delicious on the internet again for my dessert-loving stomach. A cheesecake without sugar, but with protein and plums. The cake is really quick to make and tastes good, even without sugar.

Preparation

  1. Preheat the oven to 160° C (fan), or set up the air fryer.

  2. Beat the Skyr with the eggs, the pudding powder, sugar substitute, and vanilla extract with a hand mixer until creamy.

  3. Pour the mixture into a greased baking pan.
If using an air fryer, use only the outer shell of the baking pan and place a sheet of parchment paper or baking foil on the bottom.

  4. Wash the damsons, pit them, cut into strips, and place on the yogurt mixture.

  5. Generously sprinkle with cinnamon.

  6. Finish baking in the oven at 160° C (fan/convection) for about 30 to 35 minutes.
Finish baking in the Airfryer at 150 °C for 35 to 40 minutes.

Tips & Notes

I used 1 large tbsp of honey as a sugar substitute and 1 scoop of Chunky Flavour Vanille (von More).
I baked the whole thing in the oven for 30 minutes.
Let the cheesecake cool or put it in the refrigerator; it tastes even better chilled. Drizzle with a little honey when serving.
