My mother used to serve us Hortobágy-style pancakes quite often. We always loved them. She modified the recipe a bit, and we liked it so much. Today, I still cook it again and again.

Extra info:If you are in a hurry, you can exceptionally use ready-made spice mixes; for the sauce, this would be, for example, a base for paprika cream schnitzel, and for the minced meat, a base for pasta asciutta.

Preparation

  1. Stir the ingredients for the pancake batter into a smooth batter and let it rest for at least 20 minutes.

  2. Then grease a pan with a little oil, set the stovetop to medium heat and only pour one ladleful of batter into the center of the pan when the pan is very hot.

  3. Now quickly tilt and swirl the pan back and forth so the batter spreads evenly.

  4. Let the batter brown slightly, then put the crepe on a plate.

  5. Continue like this until all the batter is used up.

  6. For the filling, brown the ground meat in a pan, add finely chopped onion and garlic and sauté briefly.

  7. Deglaze with the tomato paste and the tomato sauce.

  8. Add ketchup and season well.

  9. For the sauce, mix vegetable soup and heavy cream in a pot and bring briefly to a boil.

  10. Cut the bell pepper into small dice and add it together with the crème fraîche and the paprika powder.

  11. Let everything simmer together for about 5–10 minutes.

  12. The bell pepper should be nice and soft.

  13. I pureed the sauce finely with an immersion blender; of course you can also leave it as is.

  14. Preheat the oven to 180°C (356°F) top and bottom heat.

  15. Brush a large baking dish with a little oil.

  16. Place a little of the meat filling on each Palatschinke and roll up.

  17. Arrange the Palatschinken side by side in the baking dish.

  18. Pour the paprika cream sauce over everything and bake in the oven at 180°C (conventional heat) for about 15 minutes so that everything is nice and hot.

  19. Remove from the oven and serve the pancakes with a dollop of sour cream and a sprinkle of paprika powder.
