Here I tried making Käsespätzle (cheese noodles) myself. My family always likes to order Käsespätzle in restaurants, so I wanted to treat them to it. For Spätzle, you need a Spätzle grater; I bought mine from Tupper.
Here is my recipe, which worked wonderfully:

Preparation
Mix flour, water, salt and eggs well (do not beat!) and let sit for 10 minutes.
Bring a pot of water with a pinch of salt to a boil.
Press the dough through a Spätzle grater directly into the salted water.
Let the Spätzle boil briefly, then drain and rinse with cold water.
Then toss briefly in hot butter.
Grease a baking dish with some butter and pour in half of the Spätzle, sprinkle half of the cheese over it.
Then add the rest of the Spätzle and spread the remaining cheese on top as a topping.
Bake the Spätzle in the oven with top and bottom heat at 150° C for approx. 10 minutes; the cheese should melt nicely.
Cut the onion into rings and coat them in flour in a bowl.
Heat the oil in a pan and fry the onion rings until crispy.
Arrange the onion rings over the Spätzle and serve.
Tips & Notes
If the dough is too stiff, add a little water.
