A dear friend gave me these cookies to try and I was absolutely thrilled. I have to bake them myself. These coffee cookies are not only suitable for Christmas, but also perfect for a coffee break. You have to try them:

Preparation
First, mix the ingredients for the dough by hand into a smooth dough.
Wrap the finished dough in cling film and let it rest in a bowl in the fridge for about 30 minutes.
In the meantime, make the filling.
Put all the ingredients in a bowl and mix well with a hand mixer.
Set aside.
Preheat the oven to 180°C (356°F) top and bottom heat.
Roll out the dough on a floured surface with a rolling pin and cut out shapes as desired.
Place the cut-out cookies on a baking sheet lined with parchment paper and bake at 180°C (top and bottom heat) for about 12 minutes until light brown.
Let cool, then spread with the filling and assemble.
For the glaze, stir the ingredients in a bowl with a small whisk until smooth and spread on the cookies with a brush.
For decoration, add a chocolate mocha bean.
Tips & Notes
Always cut out 2 matching shapes, since the cookies are assembled with the filling. Unfortunately I didn't have them at home and just used chocolate drops.
