Preparation
Carefully prepare the potatoes and asparagus: wash, peel, and wash again. Naturally, the potatoes should be cleared of any unsightly spots and the asparagus of any woody ends. Then, cut the potatoes into slices and the asparagus into bite-sized pieces. Now place the vegetables in a pot with enough water and a pinch of salt and cook until al dente.
In the meantime, prepare a little instant broth or some stock. Melt the butter in a pot and immediately stir in the flour. Now, remove the pot from the heat while stirring vigorously and gradually mix in the broth until a creamy sauce has formed. Season with ham (omit this addition for vegetarians) and herbs.
Once the vegetables are cooked, remove them from the water and place them immediately on a plate. Then season with the sauce – done.
