Preparation
First make the dough: mix all ingredients well in a bowl so that a dough forms.
Ours turned out very crumbly, but still wrap it in cling film and let it rest in the refrigerator for 1 hour.
Preheat the oven to 180°C (356°F) top and bottom heat.
Meanwhile, prepare the filling.
For this, cut the dates into very small pieces.
If you have one, you can do this with a vegetable slicer.
Finely chop and grate the almonds.
Put all ingredients in a bowl and mix well.
After one hour, take the dough out of the refrigerator and roll it out on a work surface with a rolling pin.
We actually didn't need any extra flour; the dough rolled out well.
Cut out cookies with small cookie cutters: circles, flowers, stars, hearts, etc.
Line a baking sheet with parchment paper and place the cookies on it.
Now spoon the filling onto the cookies with a small spoon.
Bake on the middle rack at 180°C (356°F) top and bottom heat for approx. 15 minutes.
