Ingredients

Preparation

  1. Preheat the oven to 180°C (top and bottom heat).

  2. Cut 10 - 12 circles about 16 cm in diameter from baking paper.

  3. To shape the paper into cones, cut once from the edge to the middle and secure it as a cone with a paperclip.

  4. Place these paper cones point-down, preferably in small ovenproof cups or molds.

  5. Separate the eggs and beat the egg whites with a pinch of salt until stiff.

  6. Now gradually add the sugar.

  7. Then stir in the egg yolks.

  8. Mix the flour with the almonds and the starch and fold into the beaten egg whites.

  9. Fill the batter into a piping bag and pipe it into the paper cones.

  10. Bake the cups in the hot oven at 180 °C for 15-20 minutes.

  11. Remove the finished cones from the oven and turn them upside down to cool on a wire rack.

  12. Melt the couverture in a hot water bath.

  13. Put the pistachios into a large bowl.

  14. When the almond sponge cones have cooled, remove the baking paper.

  15. Brush the cone completely with the melted couverture and roll it in the ground pistachios.

  16. Use a small spoon to place the remaining white couverture on the tip of the cone.

  17. Use sugar-decor icing to pipe small red balls onto the trees and place the small silver sugar pearls on them.
