Kohlrabi soup is not only delicious, but also quite affordable. With just a few ingredients, you can quickly conjure up a tasty lunch that perfectly showcases the rather inconspicuous kohlrabi.

Preparation
First, the kohlrabi are stripped of their leaves and stalks, cleaned and washed.
Now it is peeled, rinsed under running water and then cut.
First, the kohlrabi are cut into slices and then into uniform sticks.
Put the butter into a large pot, heat it and add the kohlrabi sticks.
The vegetables are sautéed for about 5 minutes, then the vegetable broth and the milk are added.
Now bring everything to a boil.
Simmer the kohlrabi soup over low heat for about 15 minutes, stirring occasionally.
Now the instant mashed potato powder comes into play.
Add the entire contents of one packet and stir vigorously until the soup has thickened a bit, then continue cooking.
For the bratwurst dumplings, the mixture is pressed out of the sausages' casings.
Simply squeeze out small portions, shape them into small balls, add them to the pot and let them simmer over low heat for about 10 minutes.
Finally, the kohlrabi soup is seasoned with salt, pepper and a hint of curry powder.
If you like, you can sprinkle fresh parsley over the soup, serve with baguette and enjoy.
