My husband asked for healthier Christmas cookies. Of course, butter and sugar belong in cookie dough, but you can add healthier ingredients like dried fruit, honey, or rolled oats. Here I found a great recipe where you spice up the cookies with a muesli mix. The muesli mix is prepared with healthy rolled oats, cranberries, and apricots. It tastes really good and you don't feel quite as guilty when snacking:

Extra tip:Depending on your taste, you can of course prepare the apricots or cranberries with other dried fruits: dried bananas, figs, raisins, plums, dates, etc.

Preparation

  1. Preheat the oven to 175°C (top and bottom heat).

  2. For the dough, beat the soft butter with the powdered sugar and the egg until creamy.

  3. Add the flour and knead into a nice smooth dough.

  4. Wrap in cling film and chill for 30 minutes.

  5. In the meantime you can prepare the ingredients for the topping: finely chop the cranberries and apricots.

  6. Bring the butter, honey and whipping cream to a boil in a saucepan.

  7. Now add the apricot pieces and oats, bring briefly to a boil, then add the cranberries.

  8. Let the mixture cool slightly.

  9. Line a baking sheet with parchment paper and roll out the dough on a floured work surface to 3-4 mm thickness.

  10. Now you can nicely cut out cookies; we cut circles, flowers and stars.

  11. Place the cookies on the baking sheet and top each with a small heap of the muesli mixture.

  12. Bake the cookies in the oven at 175° C for about 10-15 minutes; the cookies should still be pale.

  13. Allow to cool well and serve dusted with powdered sugar.

Tips & Notes

Depending on taste, you can of course prepare the apricots or cranberries with other dried fruit: dried bananas, figs, raisins, plums, dates, etc.
