The orange flan is a wonderful combination of cream and fruit that literally melts on the tongue and is also excellent to prepare in advance.Admittedly: the preparation of the orange flan is a bit time-consuming, but it is definitely worth the effort.

Preparation

  1. For the flan, first lightly score the organic lemon with a vegetable peeler.

  2. This leaves small strips of zest, which are brought to a boil with the cream, the sugar and the cinnamon stick.

  3. After boiling, remove the pot from the heat and let it cool for one hour.

  4. Then strain the mixture through a sieve.

  5. Now the eggs and the egg yolk can be added.

  6. Make sure that the cream mixture is well combined with the eggs.

  7. An electric mixer can do this job very well.

  8. Next, fill a deep baking tray halfway with water and place the pan in the oven on the lowest rack.

  9. The flan mixture is now poured into the prepared ramekins, which are then placed in the water bath.

  10. At 140°C the flans now cook for about 90 minutes.

  11. After the cooking time, remove the flans from the water bath and let them cool in the molds.

  12. For the orange sauce, juice 2 organic oranges.

  13. The remaining oranges are peeled with a sharp knife so that the bitter white pith is completely removed.

  14. Only the lush flesh remains, which is then cut into half-centimeter-thick slices.

  15. Now the vanilla pod comes into play.

  16. They are cut lengthwise so that you can access the valuable vanilla seeds.

  17. Scrape out these vanilla seeds with the back of a knife and add them to the orange juice.

  18. Also add the sugar, 150ml water and the vanilla pod itself to the orange juice.

  19. This mixture is now brought to a vigorous boil until a uniform syrup forms.

  20. The orange slices are placed in a suitable dish or bowl and covered with the orange syrup, in which the fruit should marinate for at least 2 hours.

  21. Once the flan has cooled thoroughly, you can turn it out onto a plate.

  22. If this proves difficult, carefully loosen the mixture from the rim of the mold with a sharp knife or briefly place the mold in hot water.

  23. Serve with orange syrup and the orange slices, and the delicious dessert is ready.

The flan mixture yields approximately 8 ramekins with a capacity of about 150ml each.
