My sister-in-law prepared parasol mushrooms as pizza. A brilliant idea, I think, so here is the recipe for it:
Parasol Pizza
Extra tip:The pizza topping can of course be wonderfully varied and can also be made vegetarian.

Preparation
Preheat the oven to 180°C (356°F) top and bottom heat.
Clean the parasol mushrooms well (do not rinse under water) and remove the stems if present.
Brush the baking dish with a little oil and place the mushroom caps, gills facing up, into the dish.
Carefully spread tomato paste on each cap.
Wash the bell peppers and tomatoes, remove the stems, and finely chop the flesh.
Peel and finely chop the onion; also finely dice the ham and salami.
Assemble the pizza topping from these ingredients and spread it over the parasol mushrooms.
Sprinkle with pizza seasoning, salt, pepper, and cheese.
Bake the parasol pizza at 180°C (356°F) top and bottom heat for approx. 15 to 20 minutes.
Tips & Notes
The pizza topping can, of course, be easily varied and can also be made purely vegetarian.
