Recipe for a pistachio tiramisu without raw eggs

If you really like pistachios, you'll be well advised with this variation of a tiramisu. This one uses pistachios. The recipe does not require raw eggs and could also be made without alcohol. Here is the recipe:

Extra tip:If you want to make this tiramisu without alcohol, simply use 2-4 drops of bitter almond oil instead of the Amaretto, or 50 ml of almond syrup (but then omit the vanilla sugar!)

Ingredients

Preparation

  1. Whip the heavy cream with a hand mixer until stiff.

  2. In a separate bowl, mix the mascarpone, vanilla sugar and the pistachio cream well with a hand mixer.

  3. Fold in the whipped cream and mix everything into a smooth mixture.

  4. Mix the milk with the Amaretto and set aside, and prepare the ladyfingers.

  5. Prepare a large - preferably rectangular - dish and layer the tiramisu as follows:

  6. First briefly dip the ladyfingers in the Amaretto milk and line the bottom of the dish.

  7. Spread half of the cream evenly on top.

  8. Then dip the ladyfingers again in the almond liqueur milk, make a layer on the cream, and spread the remaining cream on top.

  9. Let the tiramisu soak in the refrigerator for at least 4 hours, or even better, overnight.

  10. Before serving, garnish the tiramisu with the chopped pistachio kernels.

Tips & Notes

If you want to make this tiramisu without alcohol, use instead of the Amaretto simply 2-4 drops of bitter almond oil, or 50 ml almond syrup (but then omit the vanilla sugar!).
