This wonderful fresh mango cheesecake is packed with protein and will provide refreshment in warm weather, as it tastes excellent chilled. In the ingredients, Greek yogurt supplies high-quality protein and calcium. Depending on the fat level, it also provides a creamy consistency and can be quite filling.

Cream cheese also contains protein and calcium, but – especially in the full-fat version – can contain relatively high amounts of saturated fats. A lighter variant reduces fat and calorie content without sacrificing the creamy consistency.

Eggs are a good source of high-quality protein and provide, among other things, vitamin B12, vitamin D and choline. They make dishes more satisfying and support the maintenance of muscle mass.

Mango brings natural sweetness as well as vitamin C, beta-carotene and fiber to the recipe. This means no sugar needs to be used in this cake. Fruit and dairy products generally combine well as a balanced snack or dessert.

Preparation

  1. Preheat the oven to 170° C (top and bottom heat).

  2. Finely purée the mango in a bowl using an immersion blender.

  3. Add the yogurt, cream cheese and eggs and purée as well until you have a nice homogeneous mixture.

  4. Line a cake tin with baking paper and fill it with the mixture.

  5. Bake the cake in the oven for approx. 40 to 50 minutes. For me it was 50 minutes.

Tips & Notes

The cake tastes even better cold: let it cool to room temperature and then chill in the refrigerator for at least 5 hours, or preferably overnight.
