After much back and forth, I finally dared to make this cake. Anyone who has followed my blog for a while will have noticed that my daughter loves colorful baked goods, and this cake was perfect for her birthday. Admittedly, it is a bit more effort, but what wouldn't you do for bright, happy children's eyes. I wanted to use a cake cream without butter and found a very simple, great cream here with quark, whipped cream, and mascarpone. Here is my recipe for a very good rainbow cake that is not too sweet:

Conclusion

I admit, I had a little respect for the cake because I read everywhere that it is very elaborate. But I have to say, I didn't find it that bad. You should just plan some time so that you can bake the cake sheets one after the other, but that was it. These cake layers detached very nicely from the mold, so we had hardly any loss of time and could immediately slide the next one into the oven.
I also decided on 'only' 6 colors so that, firstly, I have less baking to do, and secondly, the cake does not get too high. Taste-wise, I was also very surprised; the cake tasted very good, and I was quite enthusiastic about the 'quark-mascarpone-whipped cream' frosting.
