Beef roulades are something very fine for the Sunday table. Admittedly, they are a bit elaborate, but homemade is just homemade. Here you will find a recipe for beef roulades:

Preparation
First preheat the oven to 180° C.
Spread the beef schnitzels on a work surface, pepper them and spread a thin layer of mustard.
Peel the carrots and, like the cucumbers, cut them very finely, either into cubes or thin strips.
First lay the bacon on the meat and then distribute the vegetables on top.
Roll up the beef schnitzels and secure them with kitchen twine or a toothpick.
Heat the oil in a pan and brown the roulades briefly on all sides.
Make sure that the meat is still pink inside.
Set the roulades aside and use the browned bits for the sauce.
For this, sauté the finely chopped onions in the pan and, as soon as they begin to take on color, sprinkle with flour and briefly fry together.
When the mixture has taken on color, pour in the broth and stir vigorously to avoid lumps.
Bring everything to a boil once, remove from the heat, add the beef roulades again and let them braise in the oven at moderate heat for 30 to 40 minutes.
Beat the sour cream in a bowl until creamy and stir in the mustard, salt and pepper toward the end of the cooking time.
Remove the beef roulades from the oven and remove the twine or toothpick.
Serve with mashed potatoes, potatoes, dumplings, or noodles.
