My dear friend Carina brought these amazing snowballs to our carnival party. They taste sooooo good – I love coconut so much, and they fit perfectly into my coconut recipe collection. You absolutely have to try them too:

Extra tip:Prepare them a day in advance, then they taste even better. The balls can be frozen very well.

Preparation
Preheat the oven to 160°C (320°F) with top and bottom heat.
Beat the eggs with the sugar and vanilla sugar until light and fluffy.
Add the water, as well as the flour combined with the baking powder.
Mix everything into a smooth batter and either spread it onto a greased baking sheet or bake it in a cake tin.
Bake in the oven with top and bottom heat at 160° C for about 15 minutes.
Allow the sponge to cool, and in the meantime prepare the cream.
Whip the cream until stiff peaks form.
Mix the quark, crème fraîche, coconut syrup and whipped cream into a cream.
Crumble the sponge and mix it with the cream.
Form balls from the mixture (about 30 pieces) and roll them in desiccated coconut.

Prepare them a day in advance; they taste even better that way. The balls freeze very well.
