For our master cooking session we chose something very special this time: a smoked-herring stew with dumplings. One of our master chefs discovered this Creole dish while on vacation — and was so enthusiastic about it that he insisted we try it. And what can I say? This aromatic stew convinced me completely as well! That's why I don't want to withhold the recipe from you and invite you to try cooking it.

Ingredients

Smoked Herring Stew

Dumplings

Preparation

  1. First remove the bones from the fish and flake the fillet.

  2. Then chop the vegetables: finely chop the onion, garlic, pepper and tomatoes.

  3. Warning: cut the hot pepper on a separate board - remove the seeds (they are particularly hot).
Extra tip: it's best to wear rubber gloves for this

  4. In a large pot, heat the olive oil now and first sauté the onions until pale yellow, then add the garlic and sauté it as well.

  5. Now add the bell peppers and roast them as well.

  6. When everything is nicely browned, add the tomatoes and pour in a little water.

  7. Now add the fish and let everything simmer for about 20 minutes.

  8. Only after that season with Vegeta or bouillon cubes.

  9. In the meantime make the small dumplings/Knödel. For this, put some flour, a pinch of salt and nutmeg into a bowl and pour in water. The trick is that the dough should be smooth, i.e. not sticky. If it is sticky, add a little more flour and knead well. You can feel immediately when the dough is right because it no longer sticks to your fingers. I added flour a few times and then water again until it was right.

  10. Prepare a board or a plate with flour and then form small balls from this dough, press them slightly flat and place them on the board.

  11. Add the dumplings directly to the stew and let them simmer with it.

Tips & Notes

If you want the dumplings served separately, you can also finish cooking them in a separate pot of salted water and serve them alongside.
