Minestrone soup

Minestrone is an Italian soup that consists of many different types of vegetables and owes its robust flavor to air-dried bacon. Depending on the region of Italy, rice or pasta, eggplant, zucchini, mushrooms, or pesto are also added to the soup.

Recipe for Minestrone soup

The minestrone tastes best when served very warm and can be refined with Parmesan. Reheated a second time (as lunch for the next day), the minestrone is even better. Depending on your taste, you can of course use other types of vegetables. From savoy cabbage to peas to pumpkin, almost anything is suitable. Preparation

  1. For the minestrone, the vegetables should be prepared first. To do this, wash the spring onions and cut them into rings. Peel, wash, and cut the potatoes, celeriac, and carrots into bite-sized pieces.

  2. Heat the oil in a large soup pot and melt the bacon in it. Then add the vegetables and sauté them as well.

  3. Now the vegetable-bacon mixture is deglazed with the vegetable broth and then simmered for 15 minutes.

  4. Now the pasta is added and, stirring, cooked for another 10 minutes until it is finally al dente. To finish, the green beans from the can are placed in a sieve and rinsed under running water until no more foam forms. Together with the chopped tomatoes, the remaining vegetables are added to the minestrone and heated.

Tips & Notes

Minestrone tastes best when served piping hot and can be finished with Parmesan. Reheated a second time (as lunch for the next day) the minestrone tastes even better. Depending on your taste, you can of course use other vegetables as well. From savoy cabbage to peas to pumpkin, almost anything works. The important thing is that the minestrone is richly filled with vegetables.
