Admittedly, the name sounds a bit strange for Christmas cookies, but that's exactly why we absolutely had to try this recipe. It's a great way to use up leftover egg whites. The recipe is simple and quick to make. And who wouldn't want to say to their loved ones: Who wants wasp nests for dessert?

Preparation

  1. Preheat the oven to 150°C (top and bottom heat).

  2. In a bowl, beat the egg whites with a hand mixer until very stiff.

  3. Gradually add the vanilla sugar and sugar, as well as the lemon juice.

  4. Continue beating until the sugar has dissolved.

  5. Finally fold in the chocolate and the almonds with a spatula.

  6. Line the baking sheet with parchment paper and set out the wafers.

  7. Now place dollops of batter (1–2 teaspoons) onto the wafers and arrange them on the baking sheet.

  8. Decorate the macaroons with a walnut.

  9. Now finish baking the macaroons in the oven for 35 minutes; the cookies may have a soft center—they continue to cook and will harden slightly after cooling.

  10. It's best to let the cookies cool on a wire rack.

  11. Serve the wasp nests dusted with a little cocoa.

Tips & Notes

We used only half walnuts because we made smaller cookies.
