In late summer and early autumn, the time has finally come again: the plums are ripe and just waiting to be turned into a wonderful plum cake. Whether baked on a baking sheet or in a springform pan, the juicy stone fruit is a treat for young and old. However, for the plum cake to turn out well, a few criteria must be met: the plums should definitely be ripe and firm. Overripe fruit is better suited for compote and jams.

Important: the plums must be washed before processing, because the white wax layer protects the stone fruit from drying out. Now the fruit can be cut open and pitted with a sharp kitchen knife. This is very easy, for example, with a plum pitter, which can be ordered easily and conveniently via Amazon.

A yeast dough or a batter is very suitable as a dough for a successful plum cake. Depending on the recipe, the cake tastes excellent cold or lukewarm, with a dollop of cream or in combination with other fruits – so there are hardly any limits to the possibilities.

Small tip: if you like it sweet, you can sprinkle a little sugar on the somewhat tart-tasting plums. Pearl sugar looks particularly decorative – its slight caramel note provides a delightful taste experience.

Preparation

  1. First, warm the milk to lukewarm, then crumble the yeast into it and dissolve it.

  2. In another bowl, mix the flour with 60 g of sugar and fold in the yeast milk.

  3. Now add one egg, the soft butter and the cinnamon.

  4. This mixture is worked with a hand mixer (using dough hooks) until the dough pulls away from the sides of the bowl.

  5. Covered and kept in a warm place, the yeast dough can rest for about half an hour.

  6. Once the yeast dough has risen nicely, it can be rolled out on a baking sheet lined with parchment paper in the next step and allowed to rest for another 20 minutes.

  7. After the resting period, the washed, pitted plums are arranged on the dough.

  8. The remaining sugar is now mixed with the three eggs and the sour cream.

  9. This cream topping is poured over the sheet cake and finally topped with a little sugar.

  10. In a preheated oven at 200°C (top and bottom heat) (gas mark: 3, fan: 180°C) the cake may bake on the second rack from the bottom for 25–30 minutes.

  11. Wash the plums, make a cut and remove the stones — easiest with a plum pitter from Amazon — then cut lengthwise and open them up.

  12. Put the cream into a bowl, then rinse out the cup and use it as a measuring cup for the sugar and the flour.

  13. Now add the sugar and lemon zest to the cream and beat with a hand mixer for about 2 minutes until creamy.

  14. Now stir in the eggs, then fold in the flour and the baking powder until a homogeneous batter forms.

  15. The batter is then smoothed out on a baking sheet lined with parchment paper.

  16. The plums are now placed evenly on the batter with the cut side facing up.

  17. The sheet cake is baked in a preheated oven at 180°C (gas mark: 2–3, fan: not recommended) on the second rack from the bottom for about 30–40 minutes.

  18. After cooling, the cake is sprinkled with vanilla sugar and pistachios – done.

Tips & Notes

Important: the plums must definitely be washed before processing, because the white waxy coating protects the stone fruit from drying out.
